GOGYO means the Five Elements — Wood, Fire, Earth, Metal, and Water — the forces that move through nature and meet on the plate. At the heart of it is Fire.
Our signature Kogashi Miso, with miso charred at 572°F (300°C), was born in Fukuoka in 1999: ramen reimagined in the spirit of a long-standing soba house, where you graze, you drink, and you finish with noodles — what we call Ramen Dining. We carry the lineage of the IPPUDO family (300+ restaurants worldwide, in New York since 2008); this is the fifth GOGYO in the world.
Think of this menu as a journey through the five elements — from the green of Wood, rising into the char of Fire, through the depth of Earth and the precision of Metal, and out to the sea of Water. GOGYOとは、五行——木・火・土・金・水。自然を巡る五つの力が、料理の中で出会い、響き合う。その中心にあるのが"火"です。300°C/572°Fで味噌を焦がした看板の一杯〈Kogashi Miso〉は、1999年、福岡で生まれました。長く続く蕎麦屋の「つまんで、飲んで、麺で〆る」作法を、ラーメンに写した新しい食のかたち——Ramen Dining。世界に広がる一風堂ファミリー(300店以上/NYは2008年から)の系譜を受け継ぎ、GOGYOとしては世界で5軒目のこの地へたどり着きました。
